Pestogetti

This is a really simple dish that keeps well in the fridge and can be portioned out and warmed in the microwave. This recipe will make 7 or 8 servings and is designed to use full containers of each ingredient so there won't be those partially filled containers cluttering up the pantry or fridge.

Ingredients

A full 13.25 oz box of whole wheat Linguine, a small carton of Button or Baby Bella mushrooms, a large Onion, and a jar of Classico Basil Pesto.

 

 

Chopped

 

 Start the Linguine cooking per the carton instructions. Finely chop the Onion and the mushrooms and sauté with a little Olive oil until the Onions are translucent. Add the jar of pesto and simmer over low heat for a few minutes until the Linguine is done.

 

toss together

 Toss the Pesto mushroom mixture together with the Linguine and serve while it's hot or refrigerate and nuke in desired portions.
